Grilled rye bread sandwich with Parma ham and parsley pesto

1Sprinkle two slices of Kohberg Rye bread with a good olive oil and toast them.
2Butter one slice of grilled rye bread with a stirred aioli, and top it with a salad of rocket, lettuce and peas.
3Place slices of Parma ham and mozzarella on the salad.
4Top with a parsley pesto made like a regular pesto, where the basil and pine nuts are replaced with parsley and sunflower seeds.
5Close the sandwich with the last slice of grilled bread.
